  • Mix cream, milk, and sugar in a small saucepan and simmer over medium heat, stirring intermittently. Turn off the heat and chill the mixture to below 110 degrees Fahrenheit.
  • Spread dry active yeast over the surface of the liquid and allow it to flourish for 10 to 15 minutes; the mixture should expand.
  • Stir together the flour and salt in the mixing basin of a stand mixer. Add the yeast-water mix to the flour mix and knead on speed 2 for approximately 5 minutes with the dough hook.
  • Coat a glass bowl and your palms with oil. Form the dough into a ball with your palms, then transfer it to the oiled bowl.
  • Cover and rise in an oven for 1 to 2 hours or until at least double in size.
  • Turn the pastry dough onto a floured surface and shape it to a thickness of approximately 12″. Use a 3″ round cookie cutter for the donuts and a 1 12″ round cookie cutter for the donut openings.
  • Form the dough, including the donut holes, into a ball and allow it to settle for 10 to 15 minutes before rolling it out again and cutting it into additional donuts. Continue doing so until all of the pastries have been cut out. Or you can omit the donut centers.
